An oatmeal coconut drop cookie that is flavored with golden syrup and is really easy to make from scratch. The end result is a moist chewy cookie that tastes like happiness.

Ingredients
  1. 1 cup rolled oats
  2. 1 cup all-purpose flour
  3. 2/3 cup caster sugar
  4. 1/8 teaspoon salt
  5. 1 cup desiccated unsweetened coconut
  6. 1/2 cup butter (diced)
  7. 3 tablespoons golden syrup
  8. 1 teaspoon baking soda
Instructions
  1. Preheat oven to 160C.
  2. In a large bowl, combine oats, flour, sugar, salt and coconut.
  3. In a small saucepan, combine butter and golden syrup. Stir occasionally over medium heat until butter is melted.
  4. Add baking soda and stir.
  5. Immediately pour into flour mixture and stir to combine.
  6. Gather dough into well-rounded teaspoons (add a tiny bit of water if too crumbly).
  7. Place 2-3cm apart on lined baking sheets.
  8. Bake 10-13 minutes or until golden brown.
  9. Remove from oven and let cool slightly before transferring to a rack to cool completely.
  10. Store in airtight container at room temperature 1 week or freeze for longer storage.
