Super easy & moist banana bread

My family always over buys fruit. Especially bananas. Yes, I know you like bananas dad but why would you buy more than your stomach can handle? Haven’t you learnt that you are never able to finish it all?

You can add your own variations to this recipe: nuts, chocolate, fruit, cinnamon, etc. The original recipes used white sugar but I personally prefer brown sugar because it gives the bread a more caramel-y taste. Smells beautiful during baking too!

A super easy & moist recipe of the traditional banana bread. You can add your own variations to this recipe: nuts, chocolate, fruit, cinnamon, etc. Adapt from The Food Network recipe but I omitted the cinnamon and used brown sugar instead of white sugar. Brown sugar makes it taste more like caramel.

Ingredients
  1. 4 cups white flour
  2. 1 teaspoon salt
  3. 4 eggs
  4. 4 teaspoons baking powder
  5. 1 cup butter at room temp)
  6. 3 cups banana (ripe & mashed)
  7. 2 cups brown sugar
  8. 1/2 teaspoon vanilla
Instructions
  1. Pre-heat oven to 160c (or 140c fan forced).
  2. Put butter, eggs, sugar and banana's into a large bowl and blend with an electric mixer.
  3. Add flour, salt and baking powder, and vanilla.
  4. Beat for 1-2 minutes with the electric mixer until well blended.
  5. If using extra ingredients (nuts or dried fruit) fold in now.
  6. Pour into two sprayed or greased 9x5x3" loaf pans.
  7. Bake for 1 hour and 30 minutes.
  8. Remove, cool in pan for 5 minutes.
  9. Transfer to rack to complete cooling.
  10. Slice and serve with butter or enjoy as is.
If freezing banana bread
  1. You must must must NOT let it cool too long, I wrap it when it's barely cool enough to handle. The longer it cools the more moisture it will lose.
  2. Slice into portions before wrapping tightly with glad wrap.
  3. Freeze.
  4. To reheat: microwave for 1.30 to 2 minutes.
