Ingredients
  1. 1 cup butter (softened to room temperature)
  2. 3/4 cup (95g) icing sugar
  3. 1 tsp vanilla extract
  4. 2 cups flour
  5. 1 cup macadamia nuts (coarsely chopped)
Instructions
  1. Cream the butter until smooth and beat in the powdered sugar and vanilla.
  2. When the butter and sugar are combined, slowly add flour and beat until incorporated.
  3. Mix in the 1 cup of coarsely chopped macadamia nuts.
  4. Roll the dough into a log and cover with plastic wrap.
  5. Refrigerate for 2 hours.
  6. Heat oven to 150C (130C fan-forced).
  7. Remove dough from refrigerator and slice the log into slices.
  8. Place the slices on lined baking sheet and bake for 20 minutes or until the cookies turn golden around the edges.
  9. Remove from oven, remove from baking sheet to cooling rack.
Notes
  1. Optional: dip the cookies in chocolate and sprinkle with crushed macadamia nuts.
