Blueberry yogurt log cake

I loooooveee yogurt so naturally I love yogurt cake! I could eat endless amounts of this without feeling sick.

Blueberry yogurt log cake
Serves 6
Nice and fruity but creamy (healthy type of creamy) yogurt log cake. Super easy and tastes amazing!

Ingredients
  1. 150 gr unsalted butter, melted
  2. 220 gr sugar
  3. 2 eggs
  4. 140 gr Greek yoghurt
  5. 1 tbsp of finely grated lemonzest
  6. 1 tsp vanilla extract
  7. 225 gr self raising flour
  8. 125 gr fresh blueberries plus some extra to serve
  9. icing sugar to dust
Instructions
  1. Preheat the oven to 160 C.
  2. Put the butter, sugar, eggs, yoghurt, lemonzest and vanilla in a bowl and mix to combine
  3. Add the flour ad mix everything well.
  4. Fold the blueberries through the batter and pour into a caketin of about 22 x 8 x 7 cm which is covered in baking paper/
  5. Smooth the surface with a spatula and bake the cake for about an hour or until it is cooked through. Test this with a wooden stick in the middle of the cake. If it comes out dry your cake is done.
  6. Leave the cake to cool for ten minutes in the tin before turning it over onto a cake rack to cool completely.
  7. Before serving dust with icing sugar and serve with some extra blueberries
