An oatmeal coconut drop cookie that is flavored with golden syrup and is really easy to make from scratch. The end result is a moist chewy cookie that tastes like happiness.

Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 2/3 cup caster sugar
- 1/8 teaspoon salt
- 1 cup desiccated unsweetened coconut
- 1/2 cup butter (diced)
- 3 tablespoons golden syrup
- 1 teaspoon baking soda
Instructions
- Preheat oven to 160C.
- In a large bowl, combine oats, flour, sugar, salt and coconut.
- In a small saucepan, combine butter and golden syrup. Stir occasionally over medium heat until butter is melted.
- Add baking soda and stir.
- Immediately pour into flour mixture and stir to combine.
- Gather dough into well-rounded teaspoons (add a tiny bit of water if too crumbly).
- Place 2-3cm apart on lined baking sheets.
- Bake 10-13 minutes or until golden brown.
- Remove from oven and let cool slightly before transferring to a rack to cool completely.
- Store in airtight container at room temperature 1 week or freeze for longer storage.
