White chocolate berrymisu

Fruity and sweet berrymisu without coffee. Even though this is a fruity recipe you won't require any fresh fruits so you can make this delicious dessert all year round!

Ingredients
  1. 500g packet frozen raspberries
  2. 180g white chocolate melt buttons
  3. 1/4 cup cocoa powder
  4. 2 cups boiling water
  5. 250g cream cheese, softened
  6. 300ml thickened cream
  7. 3 eggs
  8. 2/3 cup icing sugar mixture
  9. 1 1/2 x 250g packets sponge finger biscuits
  10. 1 cup raspberry jam
Instructions
  1. Place 2 cups raspberries on a plate lined with paper towel. Set aside until thawed.
  2. Place white chocolate in a microwave-safe bowl. Microwave 1 to 2 minutes, stirring every 30 seconds. Set aside to cool.
  3. In a separate bowl, gradually whisk boiling water into the cocoa powder to combine. Set aside to cool for 10 minutes.
  4. Using an electric mixer, beat cream cheese in a bowl until smooth. Add cream.
  5. Beat for 2 minutes or until thickened and combined.
  6. Gradually beat in chocolate.
  7. With clean beaters, beat the eggs and icing sugar in a large bowl for 8 minutes or until mixture is thick and creamy.
  8. Fold egg mixture (in 2 batches) into cream mixture.
  9. Dip half the biscuits, 1 at a time, into cocoa mixture to coat.
  10. Arrange over base of a deep dish.
  11. Spoon half the cream mixture over biscuits.
  12. Top with thawed raspberries.
  13. Dip remaining biscuits in cocoa mixture.
  14. Arrange over raspberries, pushing slightly into mixture.
  15. Spoon over remaining cream mixture.
  16. Cover. Refrigerate overnight.
  17. Microwave jam for 1 minute or until melted, stirring after 30 seconds.
  18. Arrange remaining raspberries over tiramisu. Drizzle with jam. Serve.
Notes
  1. Do not overheat the white chocolate. It can burn really fast so make sure you only microwave it for 30 second bursts at once.
  2. You can replace the raspberries with any berries or even any fruit.
